Want to s-t-r-e-t-c-h that paycheck farther than before? Here are some great south of the border recipes collected from All You magazine that can be made for less than a dollar per serving.
Roasted Corn, Black Bean and Tomato Salad
Yield: Serves 8
Cost per Serving: $.73
- 2 tablespoons plus 1/3 cup olive oil
- 1 onion, chopped
- 2 cups corn kernels (from about 4 ears of corn)
- 1/4 cup chopped cilantro
- 2 15 1/2-oz. cans black beans, drained and rinsed
- 3 tomatoes (about 1 lb.), cored, seeded and chopped
- 3 tablespoons red wine vinegar
- 2 teaspoons Dijon mustard
- Salt and pepper
Preparation
Preheat oven to 400°F. Warm 2 Tbsp. oil in a large, ovenproof skillet over medium-high heat. Add onion and cook, stirring, until softened, about 3 minutes. Stir in corn and cook, stirring often, until tender, about 5 minutes. Transfer skillet to oven and roast, stirring often, until vegetables are lightly browned, about 20 minutes. Immediately transfer to a plate and cool.
In a large bowl, combine corn mixture, cilantro, beans and tomatoes. In a separate bowl, mix vinegar, mustard, salt and pepper, whisking until salt is dissolved and ingredients are fully incorporated. Slowly add 1/3 cup oil, whisking constantly until blended and thickened. Pour over corn mixture. Stir well and season with additional salt and pepper, if desired.
Texas Stew
Yield: 8 Servings
Cost per Serving: $.79
- 2 pounds beef tips, cut into 1-inch cubes
- 1 (14.5 oz.) can Mexican style stewed tomatoes
- 1 (10.5 oz.) can beef broth, undiluted
- 1 (8 oz.) jar mild picante sauce
- 1 (10 oz.) package frozen whole-kernel corn, thawed
- 3 carrots, cut into 1/2-inch-thick pieces
- 1 onion, cut into thin wedges
- 2 garlic cloves, pressed
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 cup water
- 1/4 cup all-purpose flour
Preparation
Combine beef, tomatoes, broth, picante sauce, corn, carrots, onion, garlic, cumin and salt in a 5-quart slow cooker. Cover and cook on high for 3 to 4 hours or until meat is tender.
Mix water and flour in a bowl. Stir into meat mixture; cover and cook on high for 1 hour or until stew has thickened.
Spiced Chocolate Brownie Pudding
Yield: 8 Servings
Cost per Serving: $.43
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsweetened cocoa
- 3/4 cup chopped walnuts
- 3/4 cup buttermilk
- 3 tablespoons unsalted butter, melted
- 1 1/4 cups packed light brown sugar
- 1 teaspoon ground cinnamon
- 1 3/4 cups boiling water
- Whipped cream or ice cream, optional
Preparation
Preheat oven to 350°F. Butter a 2-quart oval casserole dish. In a medium bowl, whisk flour, sugar, baking powder and salt. Whisk in 3 Tbsp. cocoa and 1/2 cup walnuts. Add buttermilk and melted butter, stirring to form a thick batter. Spread batter evenly into prepared pan.
In small bowl, combine remaining cocoa, brown sugar and cinnamon. Sprinkle evenly over batter; top with remaining walnuts.
Pour boiling water in a thin stream over entire surface of brownie; do not stir. Bake until top is set and a bit crispy, 40 to 45 minutes. Serve with whipped cream or ice cream, if desired.
