Shallow Pocket Tips:

Don’t you just love using a crockpot? After all, you can make every element of your meal with one- from appetizers to desserts crockpots are the perfect kitchen tool. To round out the day, here are some simple family friendly recipes that meet the budget without spending hours in the kitchen.

Cranberry Chicken

2-3 pounds of boneless, skinless chicken breast (could use a whole chicken-cut up- if you prefer; will be slightly cheaper)

1 envelope onion soup mix

1 bottle of Catalina or Russian dressing

1 can whole cranberry sauce

Rice or pasta

Mix the last 3 ingredients together; place chicken in crock pot then pour sauce over it. Cook on low for 8 hours or on high for 4 hours. Serve with rice or pasta.

Veggie Side Dish

A simple side dish for this is to take seasonal veggies, cut so that they are similar in size. Toss in olive oil so that veggies are coated, sprinkle with salt and pepper. Place on a cookie sheet or baking dish and place in 450* oven for 15-20 minutes.

Do you have more than one crockpot? Why not take advantage of the bounty? Here is an easy and inexpensive dessert?

Baked Apples

4 baking apples, cored and unpeeled

1 tsp. of cinnamon

¼ cup brown sugar

4 TBS. butter

Place apples in slow cooker. Mix remaining ingredients and stuff into center of apples. Cover and cook on low 4-5 hours.

Serve topped with ice cream. If you really want to make this great dessert even more special, take 2 regular sized Snickers bars and cut in half. The last half hour cooking put a half Snickers bar in each apple. (This could also be made in the oven-place apples in baking dish, add 3/4 cup of apple juice, then bake at 375* for 30 to 40 minutes.)
